Eating out in Amsterdam has always been a thing. From simple and luxurious inns and dingy soup kitchens to chic restaurants, extravagant oyster palaces and a variety of eateries: over the centuries, Amsterdam residents could go to all kinds of places to satisfy their hunger and thirst.
Trade metropolis Amsterdam was already a migrant city in the seventeenth century, with a varied range of foreign inn kitchens. In later centuries, the city also set the tone for restaurant culture in the rest of the Netherlands, from the arrival of Parisian restaurants to the first kosher and Chinese eateries, pizzerias, bistros, squatter kitchens and 'nouveau rough' establishments.
Culinary historian Charlotte Kleyn, together with Maarten Hell*, delved into this underexposed cultural history, in which newcomers from all corners of the world, passionate chefs, savvy entrepreneurs and curious gourmets play a leading role.

Culinary historian and journalist Charlotte Kleyn published the books 'Luilekkerland. 400 years of cooking in the Netherlands' (2018, with Onno Kleyn) and 'Trek. Eating on the go – then and now' (2021). She appears weekly with a culinary column in Trouw and writes for Het Parool.

* obtained her PhD in 2017 on De Amsterdamse inn 1450-1800, awarded the Joop Witteveen Prize. In 2024 his book about the disappeared Amsterdam neighborhood of Vluizenburg was published.
